Carnivale Bretanomyces sprouted as a wild plan on a wild evening drinking, guess what, wild beers. The wild beers from Brussels, which we all know so well. O yes, wild people we were, back then. anyway, on that evening In De Wildeman and De Bierkoning decided to challenge the upcoming Dutch brewers to make beers with brettanomyces. Not Lambic, Not Gueuze, just with Brett. Brett and other wild animals. And they did. If we only knew we where standing on the eve of a international revaluation of our most favourite yeast, we might had come up with something less hip. But no apologies here.
